Flank Steak Rollups

IMG_0132  This Recipe looks quite impressive, yet it is very easy to make.  It would be great for serving for a dinner party.


Flank steak

8 Slices Prosciutto

1/4 c. Sun-dried Tomatoes

1 t. Garlic, minced

1 T. Onion, dried

1/2 c. Mozzarella Cheese

2 T. Parmesan Cheese

1 t. Oregano

1 t. Basil

1 t. Parsley

Salt and pepper


Preheat oven to 350 degrees.  Spray a baking dish with cooking spray.  Set aside.

Chop prosciutto and sun-dried tomatoes.

In a medium bowl, add prosciutto, tomatoes, garlic, onion, mozzarella, parmesan, oregano, basil, parsley, salt and pepper.  Mix well.

Lay out the flank steak.  Spoon mixture onto the flank steak, roll.  Fasten ends of steak with a tooth pick.  Slice flank steak roll into 2 inch pieces.  Put cut end of roll into the baking dish.  Bake foe 30 minutes or until meat is cooked to your likeness.
