I lived a high stress executive lifestyle, complete with a lot of travel. I was gaining weight and feeling the effects of aging, or so I thought. I was exhausted and just didn’t feel good. I needed to make some drastic changes to my lifestyle. I started reading everything that I could about what to eat and what not to eat, and how food affects your body. The information that I found was astounding! It was the food that I was eating that was causing the weight gain and making me feel tired. I knew that eating a piece of fish or grilled chicken and a salad for lunch and dinner for the rest of my life was just not sustainable. That’s when I had to get creative.
I’ve created recipes that are very much like the comfort foods that I grew up with. Meals that were very satisfying and that really stuck to my ribs, but using clean ingredients. I now eat lots of protein, fresh fruits and vegetables. My body is really showing these positive changes, I have more energy, I’ve lost weight and I just feel healthier. The food was so good, that friends and family started to ask for the recipes. That’s when the idea of writing a cookbook was born. I’ve tried to make the recipes as tasty and interesting as possible. Let’s face it, it’s not always much fun eating clean. I have included some yummy treats, too, just for fun!
